Summer Recipe – Potato Salad with Dill Recipe
This diabetic potato salad is great for family picnics or outings. This recipe has a few ingredients that are not typical of your potato salads, but why not give it a try. I love the creaminess of this dish! From easy-diabetic-recipes.com
Servings: 8 = 1/2 cup serving size
Ingredients:
2 cups diced boiled potatoes
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 cup reduced-calorie mayonnaise
2 tbsp prepared mustard
2 tbsp apple cider vinegar
2 tbsp pickle relish
1/2 tsp salt
1/2 tsp freshly-ground black pepper
2 tsp dill
Recipe Instructions:
1. Combine the potatoes, celery, onion, and bell pepper in a large bowl.
2. Combine the mayonnaise, mustard, vinegar, pickle relish, salt, pepper, and dill in a medium bowl and mix well.
3. Toss the vegetables with the dressing and refrigerate before serving, allowing the flavors to blend.
