This diabetic potato salad is great for family picnics or outings. This recipe has a few ingredients that are not typical of your potato salads, but why not give it a try. I love the creaminess of this dish! From

Servings: 8 = 1/2 cup serving size

2 cups diced boiled potatoes

1/2 cup chopped celery

1/4 cup chopped onion

1/4 cup chopped green bell pepper

1 cup reduced-calorie mayonnaise

2 tbsp prepared mustard

2 tbsp apple cider vinegar

2 tbsp pickle relish

1/2 tsp salt

1/2 tsp freshly-ground black pepper

2 tsp dill
